Why the omentum is removed with ovarian cancer made sense to me when I was reading about it.

Even for early stage ovarian cancer, often the ovary, lymph nodes in the pelvis and para-aortic areas and the omentum --- which is a large fold of fatty membrane inside the abdomen -- need to be removed. (There are exceptions for women of childbearing age.) This is the first step in the treatment of ovarian cancer, and it's done to rid the body of as many of the cancerous cells as possible. So if there's a chance that the cancerous tissue has spread into the omentum, it will be removed.
